- 2-3 Boneless Skinless Chicken Breast
- 4 8 inch Flour Tortillas
- 3 cup Iceberg Lettuce shredded
- ¼ cup Red Onion diced
- 1 Tomato diced
- 1 cup Cheddar Cheese shredded
- 1 cup Feta Cheese crumbled
- ¼ cup Ranch or Blue Cheese Dressing
Marinade
- ½ cup Franks Red Hot Original
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Smoked Paprika
Prep the chicken
Trim any excess fat from the chicken breast.
Butterfly the chicken breast. Using a sharp knife, make a horizontal cut into the thick side of the chicken breast, cut almost to the other side. Open it like a book.
Pat the chicken dry with paper towels to remove excess moisture.
Marinade
In a bowl, combine 1/2 cup Frank's Red Hot Original, 2 teaspoon Garlic Powder, 1 teaspoon Onion Powder, and 1 teaspoon Smoke Paprika. Mix well to ensure all the spices are evenly distributed.
Place the chicken in a bowl or resealable plastic bag.
Pour about 3/4 of the marinade over the chicken, making sure each piece is well-coated. Save the remaining for later.
Cover or seal the bag and refrigerate. All the chicken to marinate for at least 1-5 - 30 minutes. For a more intense flavor, you can marinate over night.
Grill the Chicken
Preheat your grill to a medium-high heat.
Remove the chicken from he marinade, letting any excess drip off.
Grill the chicken for approximately 6-8 minutes per side or until the internal temperature reaches 165° (74°C) and the chicken is cooked through.
Baste the chicken with the remaining marinade during the last few minutes of the grilling for an extra burst of flavor.
Allow the chicken to rest a few minutes before slicing. This helps retain its juices.
Assemble Wrap
Slice the grilled chicken breast into bite-sized pieces.
Warm the tortillas in the microwave or dry skillet until they are pliable.
Place the tortilla on a flat surface and place a handful of shredded lettuce in the center.
Arrange a portion of the grilled buffalo chicken on top of. the lettuce.
Add a portion of cheddar cheese and feta cheese crumbles.
Sprinkle diced tomatoes and diced red onions over the top.
Drizzle a spoonful of ranch dressing or blue cheese dressing over the the ingredients.
To wrap, start by folding in the sides of the tortilla then roll it from the bottom up, ensuring all the ingredients are enclosed.,
Repeat the process for the remaining tortillas and ingredients.
