Easy Blackstone Breakfast Hash

Breakfast is the most important meal of the day, and there's no better way to start your morning than with a delicious and filling breakfast hash.

Ingredients

  • ½ cup onion diced
  • ½ cup cheddar cheese shredded
  • 1 cup kielbasa diced
  • 1 ¼ cup eggs beaten
  • 4 russet potatoes diced
  • 1 tbsp olive oil
  • Salt and Pepper to taste

Instructions

  • Fill a medium pot with water and bring to a boil over high heat. Add the diced potatoes to the boiling water and cook them for about 5 minutes, just until they start to become tender. Be careful not to overcook them, as they will continue to cook on the Blackstone griddle.
  • Drain the parboiled potatoes and set them aside.
  • Preheat your Blackstone griddle to a medium-high heat.
  • Add the diced potatoes to a large bowl and toss them with olive oil, salt, and pepper until they are well coated.
  • Spread the diced potatoes evenly on the preheated Blackstone griddle. Cook for about 10-15 minutes, flipping occasionally unit the potatoes are golden brown and crispy.
  • Push the cooked potatoes to one side of the griddle and add the diced onions to the other side. Sauté the onions until they become translucent and slightly caramelized, which should take about 5 minutes.
  • Move the onions to the side with the cooked potatoes and add the diced kielbasa to the other side of the griddle. Cook the kielbasa until it is browned and heated through, which should take about 5 minutes.
  • Once the kielbasa is cooked, move to the side with the potatoes and onions.
  • Pour the beaten eggs onto the griddle and allow the eggs to cook for a minute or two until they begin to setup.
  • Using a spatula, gently scramble the eggs until the eggs are fully cooked and scrambled.
  • Incorporate the eggs, potatoes, onions, and kielbasa together. Sprinkle the shredded cheddar cheese over the top of the hash. Cover the hash with a dome or metal bowl to help melt the cheese.
  • Allow the cheese to melt for a few minutes.
  • Serve hot and enjoy your delicious Blackstone griddle breakfast hash!
