- 1 tbsp Butter
- 1 tbsp Avocado Oil
- ½ cup Carrots chopped
- ½ cup Celery chopped
- ½ cup Yellow Onion chopped
- 1 tsp Fresh Thyme or ¼ tsp dried thyme
- 6 cup Chicken Stock or Broth
- ¾ cup Uncooked Wild Rice
- 2 tsp Kosher Salt
- ½ tsp Freshly Ground Black Pepper
- 1 cup Half and Half
- ⅓ cup All-Purpose Flour
- 3-4 cup Cooked Shredded Turkey
Preparing the Wild Rice
Place the wild rice in a bowl filled with enough water to cover the rice and let sit on the kitchen count for about 2 - 3 hours.
Soaking wild rice cuts down on the cooking time.
When ready to use, drain the rice thoroughly.
Creating the Turkey Wild Rice Soup
In enameled Dutch oven or a 6-quart saucepan, heat the oil and butter over medium heat.
Add the chopped vegetables and fresh thyme. Sauté until they begin to soften, about 4 - 5 minutes.
Pour in the chicken stock or both and add the drained wild rice. Add salt and pepper. Bring it to a boil, then reduce the heat to a simmer and cover. Allow it to simmer for 30 - 40 minutes until the rice is tender.
In a separate bowl, blend the flour and half-and-half until smooth.
Slowly pour the flour and half-and-half mixture into the soup while constantly stirring.
Continue to simmer the soup until it thicken, approximately 5-6 minutes.
Add the cooked shredded turkey and simmer for an additional 3-4 minutes to heat through.
Taste and adjust seasoning as needed.
