Ingredients

  • 1 tbsp Butter
  • 1 tbsp Avocado Oil
  • ½ cup Carrots chopped
  • ½ cup Celery chopped
  • ½ cup Yellow Onion chopped
  • 1 tsp Fresh Thyme or ¼ tsp dried thyme
  • 6 cup Chicken Stock or Broth
  • ¾ cup Uncooked Wild Rice
  • 2 tsp Kosher Salt
  • ½ tsp Freshly Ground Black Pepper
  • 1 cup Half and Half
  • cup All-Purpose Flour
  • 3-4 cup Cooked Shredded Turkey

Instructions

Preparing the Wild Rice

  • Place the wild rice in a bowl filled with enough water to cover the rice and let sit on the kitchen count for about 2 - 3 hours.
  • Soaking wild rice cuts down on the cooking time.
  • When ready to use, drain the rice thoroughly.

Creating the Turkey Wild Rice Soup

  • In enameled Dutch oven or a 6-quart saucepan, heat the oil and butter over medium heat.
  • Add the chopped vegetables and fresh thyme. Sauté until they begin to soften, about 4 - 5 minutes.
  • Pour in the chicken stock or both and add the drained wild rice. Add salt and pepper. Bring it to a boil, then reduce the heat to a simmer and cover. Allow it to simmer for 30 - 40 minutes until the rice is tender.
  • In a separate bowl, blend the flour and half-and-half until smooth.
  • Slowly pour the flour and half-and-half mixture into the soup while constantly stirring.
  • Continue to simmer the soup until it thicken, approximately 5-6 minutes.
  • Add the cooked shredded turkey and simmer for an additional 3-4 minutes to heat through.
  • Taste and adjust seasoning as needed.
