When it comes to ribs, I prefer a sweet and spicy flavor that embraces the richness of caramelized sugars, the subtle warmth of cayenne peppers, and the complexity of flavors derived from chili powder, paprika, onion, and garlic.
Rib Dry Rub Ingredients
Brown Sugar sugar provides the sweet foundation for this rub. The sugar aids in forming a beautiful caramelized crust giving your ribs that beautiful mahogany appearance. Depending on your preference you can adjust the amount of brown sugar to increase or decrease the sweetness.
Course Ground Black Pepper balances the sweetness of the brown sugar and provides a warm heat to the rub. Course ground pepper imparts its flavor into the meat and is better suited for the longer low and slow cooking methods of BBQ. 16 Mesh Ground Black Pepper is very popular in the BBQ world.
Kosher Salt is a key ingredient in any rub. DO NOT use table salt for your rub. Aside from containing potassium iodide and caking agents, which may discolor the meat, its fine texture could easily result in over-salting of your rub and ribs.
Sweet Paprika, or smoked paprika, is a classic ingredient in most rubs. It helps create that deep red color in your smoke ribs. It also adds a light smokey flavor to the rub.
Granulated Garlic and Granulated Onion both bring a depth of flavor to the rub. I prefer to use granulated spices over powdered spices when I can. The larger, coarser particles ensure even distribution throughout the rub and prevent clumping when combined with brown sugar.
Chili Powder and Cayenne Pepper kick up the heat and the complexity of the rub. Adjust the cayenne pepper to your preferred level of heat.
With this Dry Rib Rub recipe, you’ll have the key to making unforgettable BBQ ribs that will have everyone coming back for seconds. The sweet, smoky, and spicy flavors in this rub create a mouthwatering combination that’s simply irresistible. So, fire up the grill, get those ribs cooking, and savor the delicious results.
